I grew up in a Latin family and community, which means food was a big part of my identity. That sentimental connection fueled my love for cooking after going vegan. Now, I’ve made it my mission to take the same dishes and veganize them.

Why Vegan?

From a young age, it weirded me out thinking what was on my plate used to be alive. It took my two tries to stop eating meat. The first was when my cousin decided to tell me exactly how they kill the pigs that I decided I wanted to make the change… I was eight. Safe to say, it was not a successful first try. While my parents were a bit supportive, I think deep down they knew it wouldn’t last long. They were right. After about a month, I gave in and ate a burger during a Fourth of July trip where there weren’t any vegetarian options. While I felt guilty, I went back to eating meat after that.

It took two more years until I decided to try again. A friend of mine was over, and my mom had made us beef tacos for dinner. After eating, my friend started to talk about vegetarianism, and I felt a pang of guilt in my stomach. I knew I had wanted to try to stop eating meat but after that first failed attempt, I felt ashamed and didn’t know how to tell my parents. So, 10-year-old me decided to sneak my not eating meat the following weeks. I would take the ham out of my sandwich and give it to friends at school, ask for rice and beans or pasta for dinner, but eventually, I had to come clean. I have to say I’m very fortunate my parents were supportive.

I was 17 and kept reading more about the egg and dairy industry. I started to transition, a few days vegan, others vegetarian.

Veganism made me fall in love with cooking. I had to learn new ways to create those flavors I craved.
