Let me be clear, I hear the word salad and I’m immediately turned off. I can’t stand anything about the traditional salad. It’s usually bland, bitter or lacking nutritional value. But! This has everything a salad should. Good fats, vegetables and high in protein.
Broccoli and Quinoa Salad

Instructions

Cook quinoa in salted water. Once done, remove from heat and let cool for a few minutes.

Place the chopped broccoli, cucumber, tomatoes, beets, pickles, parsley and chickpeas in a giant bowl.

Add the quinoa to the bowl.

Pour the lemon juice into the bowl and mix.

In a blender or food processor, blend the tahini, lemon juice, water, garlic, parsley and dill.

Keep the tahini dressing on the side, so it doesn’t spoil the salad faster.

Can stay refrigerated for 5 days.
